A ruby-style dessert wine, Immortal Ruby evokes the memories of a well-made blackberry crisp—sweet, tart, jammy and fruity—and when you’re finished, you’ll be asking for more! Pair with gingersnaps or reduce to create a decadent sauce to pour over cheesecake or ice cream.
Winemaker’s Notes
This 2018 Columbia Valley Syrah began its journey from vine to bottle on October 17, 2018, when 1.05 tons of fruit arrived for crush. Primary fermentation was arrested at 12.75 Brix by fortifying with Brandy distilled in-house from Cabernet Sauvignon.
On December 5, 2018, it was barreled and aged until August 15, 2020. Bottling took place August 27, 2020.
TASTING NOTES
A ruby-Port style dessert wine, Immortal Ruby is a berry sensation, bursting with cherry, plum, blackberry and blueberry aromas and flavors, in a full-bodied palate pleaser.
This decadent elixir could accompany dessert or steal the show as the main event.
PAIRING SUGGESTIONS
Immortal Ruby pairs beautifully with vanilla ice cream and gingersnaps, cheesecake, pumpkin pie or anything chocolate.
For the adventurous bakers, replace the water in a brownie recipe with Immortal Ruby, then drizzle it over the top before serving.

Immortal Ruby is ready to enjoy now and can age for up to 20 years. Remember, fortification extends the life of the bottle.
Store an opened bottle with the cork replaced, in a cool/dry spot and it will be delicious for weeks.
